Sear chicken thighs with fresh thyme, paprika, salt peppa. Remove from pan and set aside. Sauté onion, cremini mushrooms until soft. Add rice or quinoa with double the amount of chicken broth as grain. Add 3 big handfuls spinach. Simmer 15 mins. Add back in the chicken and simmer cover for another 15.
