Hey Neerja! Sorry for late reply. First, cook up some spaghetti. For sauce, preheat the oven at 180 c and meanwhile get the baking dish ready with aluminium foil and place the red pepper and sprinkle some olive oil on it and put it in the oven for about 10 mins. After being done roasting, red pepper should be charcoal black outside. Remove the skin and let it cool about 10 mins. Then blend the red pepper and boils tomato into the blender or food processor. Blend it until it smooth. Heat up some olive oil in sauce Pan. Add garlic and sautéed then add some finely chopped onion and cook until it soften. Then add purée and cook it until it simmer and add salt, black pepper, oregano. I add some corn starch to achieve thickness. Then add cooked spaghetti and serve hot with basil or parsley on top. You can add Parmesan as well. Roasted red pepper gives the sauce some kick and slightly burnt flavour. ?
