Ravioli filled with parmesan and ricotta tossed in tomato basil sauce
1. Use pasta maker to produce thin sheets for ravioli
Pasta ingredients consist of flour and eggs - mixed and kneaded until consistency is just right
2. Mix fresh grated parmesan with ricotta and eggs, drop onto pasta sheets and fold over, cut into squares, seal edges and toss into boiling water
3. Strain after a few minutes, toss in red sauce, add salt and pepper, additional cheese and fresh basil to garnish
