Chickpea nirvana! Make chickpea batter with 1 cup of chickpea flour, 1/4 cup cornstarch, 2 tsp baking powder, salt (and any other seasonings you like), then whisk in 1 cup of warm water; let the batter rest for 20 to 30 mins. Meanwhile, heat an inch or two of vegetable oil in a large skillet to 350 degrees F. Dredge a can of rinsed, drained chickpeas in the batter, then fry until golden and crispy. Sprinkle with sea salt.
