A beautiful medley of fresh, colorful veggies. I used my favorites but feel free to mix it up!
-Thinly slice all veggies (use a mandolin to make things quick and even!)
-Add 4 cloves of garlic, crushed
-If desired, add 1lb chicken (boneless or bone-in) Note: cooking the breasts whole and slicing after cooking will help keep them nice and juicy!
In a separate bowl, combine the following:
1 tsp cumin
1 tsp garlic granules
1 tsp onion granules
1 tsp fresh thyme
1 1/2 tsp paprika
1/4 tsp ground ginger
Pinch of cayenne pepper
-Coat veggies and chicken in 2-4 tsp oil
-Sprinkle with 1 tsp salt and 1/2 tsp pepper
-Pour in spice mixture and coat everything evenly
Line a baking sheet with foil and spread out veggies and chicken as evenly as possible (you may need two sheets)
Add 4 sprigs of fresh thyme on top.
Bake at 400 for 25-30 min (until chicken is cooked through).
