Potato leek soup. Chop one carrot, 2 celery stalks, 3 large leeks, 3 peeled and diced russet potatoes. Sautée ingredients in 3 tbs. butter until starting to get soft. Add 4 1/2 cups of chicken stock. Simmer until soft . Add a handful of spinach. Use blender to purée but keep some chunks. Finish with salt, pepper, scallion
