In a saucepan combine 2 cans chicken broth and a can of coconut milk. Add a scoop of Thai red curry paste, plus grated ginger, lime juice and fish sauce to taste. Season with salt. Add a sliced chile pepper if you like spice. Bring to a simmer and add a handful each of sliced mushrooms and baby bok choy (or whatever veggies you have, like spinach). And if you have a little chicken, mild fish/shellfish or tofu, throw it in too. Serve with cilantro and lime wedges. #notcontest
