Puff pastry prawn pizza with lemon garlic sauce ???
1 sheet of thawed puff pastry
Mozzarella (however much you like!)
Chopped scallions
For the seafood

•750grams of prawns/shrimp (cleaned)
•1 Tsp salt
•1 Tsp black pepper
•1 and a half Tsp pepper flakes
•Handful of chopped coriander
•Zest of a lemon

Toss the prawns in all the ingredients. Set aside.
For the sauce

•70grams of softened butter
•2 Tbsp flour or corn starch
•1 clove minced garlic
•Zest and juice of half a lemon
•1 cup of milk
•Half a cup of cream
•Salt and black pepper to taste

On a medium heat place the butter in a saucepan and allow it to melt.
Add in minced garlic and allow it to soften.
Add in the flour to create a roux.
Add in the juice and zest of the lemon.
Add in your milk and cream and be sure to mix this with a whisk continuously to avoid lumps.
Once your sauce is thickened, add salt and pepper to taste.

Place your puff pastry onto a greased baking sheet. Layer your sauce onto the pastry. Layer your prawns and add coriander onto this layer. Sprinkle with grated mozzarella cheese and place in a preheated oven (180degrees) and allow to bake for 20-25minutes.
Once it has cooled scatter the top with chopped scallions.
