Day-After Crunchy Quinoa Salad
Leftover turkey sausage, chopped spinach, diced celery, chopped radishes, quartered cherry tomatoes, slivered almonds, chopped parsley, diced scallions, cooked red quinoa, sea salt, black pepper, chili flakes, red wine vinegar.
Prepare red quinoa and set aside to cool.
Slice and quarter leftover turkey sausage and quickly sauté. Set aside to cool.
Chop up vegetables and parsley, dice scallions.
In a large bowl, toss cooled and chopped ingredients together with one tablespoon red wine vinegar, salt, pepper, chili flakes and slivered almonds.
