I love #ghee or #clarifiedbutter, just adds a little something, something and it's easy to make!
You need a minimum of 2 sticks of butter~preferably organic and cultured. Melt on a low heat until the milk solids settle to the bottom of the pan and become a rich amber color. The butter will become clearer and clearer and smell extra #yummy
The goal is to remove all the water and turn the butter into oil - basically. It can then be cooked at higher temperatures.
I like to do the sprinkle water test to be extra sure - wet 2 fingers and give it a gentle shake over the ghee - if the drop or 2 of water crackles its done. Be careful found this. It's just a tiny drop of water. This combined with the milk solids changing colors - and the smell - you are on your way !
Using a fine metal sieve or cheesecloth - strain into a clean jar and let cool completely then close with a lid. Water is the enemy of ghee. Always use a clean utensil and store away from heat and sun. Ghee does not need to be refrigerator~it kills all its benefits. Back home people keep ghee for month and months.
Ghee is perfect for any season and especially in the summer as it is cooling, yet it still kindles the digestive fire.
Use it like you would any oil or butter.
