Quick rainbow udon bowl. Dress broccoli and squash with white miso, a splash of soy sauce and sesame oil and roast in the oven for 20 minutes while prepping the rest of the dish. Wide udon noodles simmered for 10 minutes and then rinsed with cold water. Mushrooms sautéed with a bit of soy sauce. Assemble the bowl with chopped ginger, pickled cabbage, sliced radishes. Garnish with black sesame seeds and chives.
