Roast cut carrots, zucchini, eggplant, whole garlic cloves and leeks and until browned (and leeks are crispy) for 20-25 mins at 350 degrees. Toss veg in in a generous amount of olive oil and sprinkle liberally with salt.
Serve on top of warm couscous. Toss that couscous in some butter and salt before serving. ??
Add generous sprinkles of feta, and encourage dinner guests to squeeze that garlic clove so the caramelized garlic can me mushed and mixed with your couscous.
