Super easy weeknight dinner starring things I had lying around.

Leftover polenta- whisk in water while heating on stove until smooth. Simmer to desire consistency.

Roasted asparagus- olive oil, salt, pepper @ 400 for 20 min.

Poached egg- eh, not super easy but I'm getting better.
