Slice up your favorite mix of mushrooms- heat cast iron pan and melt 2 tbs. butter, sautée 1 garlic clove, add mushrooms and spread them out in pan. Don't toss mushrooms until carmelized on one side-(about 4 minutes) add a splash of soy sauce and pinch of brown sugar. Toss mushrooms one more time and add scallions and Aleppo pepper. Delicious with roasted asparagus.
