Pyaz ka Achar • Onion Pickle
Season pearl onions with salt and leave for two days, drain. Boil white vinegar, jaggery or soft brown sugar, chilli powder, cumin seeds, Garam Masala, and garlic for 10 minutes. Add onions and cook further 5-10 minutes. Put mix in a sterilized jar, cover with muslin and place it on a windowsill for a week, shake daily.
