Summer quinoa salad

Grill or broil boneless, skinless chicken with olive oil, garlic, salt, and pepper.

Make a balsamic vinaigrette with extra vinegar.

Toss cooked quinoa, diced cucumbers, and heirloom tomatoes in vinaigrette until well-coated. Add more vinegar to taste, then mix in chicken.

You can also substitute couscous for the quinoa!
