Chop red bell pepper and onion. Cook on the stove with a little bit of olive oil. Crack on egg and scramble with the veggies. Get another pan and heat up a corn tortilla, flip then add cheese on top, take the tortilla off as soon as the cheese melts. Add veggie eggs on top of the tortilla and some avocado. Then add some salsa. I also like to sprinkle a little pepper on top too.
I eat this everyday for breakfast! My favorite!
