Quick stovetop granola (with inspiration from a food52 recipe). Melt about a teaspoon of coconut oil and honey together over medium heat. Once just melted, reduce heat and rolled oats (I do a generous handful for one serving). Toast about 8 minutes, or longer if you prefer really crunch-- up to 10ish minutes. Add pinch of salt, chopped almonds, pepitas, shredded coconut, sunflower seeds, anything else in the pantry. Cook another 4 minutes. Just before turning off heat, toss with raisins and cacao nibs or chocolate chips.
