It's a sliced 63•c sous vide chicken breast on top of a pressure cooker done risotto made by stir frying finely chopped shallots, adding the rice and then butter. Next deglaze with white wine and add in my home made stock.

Let pressure to rise and then in a couple of minutes voila just to put it all on a plate and crack some black pepper for spice ??
