Eggs and toast are my easy go-to for a quick, filling and cheap meal! Here I added chumichurri that I already had in my fridge - a mix of flat leaf parsley, garlic cloves, olive oil, red wine vinegar, red pepper flakes and salt all whizzed together in a food processor. It was the perfect spicy, herby, acidic addition to the eggs!
