Fry garlic in the oil from a tin of a few anchovies at a low heat. Fry until a golden colour but not burnt. Add chilli flakes, black olives and capers. Then add a tin of tomatoes or two and bring to a simmer. Season the tomatoes but go easy on the salt. Put a tin of tuna in a bowl and add lemon, olive oil and black pepper. Cook spaghetti in boiling water with salt. When the pasta is nearly al dente fold your tuna into the sauce. Add a little of the pasta water to your sauce and drain the pasta. Serve with parsley and Parmesan

A somewhat more basic version of this was a staple meal in my Peace Corps days, though I often has to use rice because pasta wasn't always available. Thanks for bringing good (and tasty) memories! ?
