Aged white cheddar and Rosemary sourdough #bread
Mix together 11 oz bread flour, 5 oz whole wheat flour, 1/2 teaspoon salt in a bowl. Measure 1 1/2 cups water and mix in 1/8 cup sourdough starter. Combine dry with wet, and let mixture sit in the fridge for 2 days.
Take out of the fridge and sit it on the counter for 12-18 hours.
Sprinkle a good fist full of grated white cheddar and about 1/4 cup of chopped fresh rosemary onto dough and press in just slightly. Turn out of bowl, fold dough lazily onto itself, shape into a round, and then let proof in a well floured basket for 1 1/2 hours. Bake in a preheated Dutch oven at 500 degrees for 30 minutes covered, and an additional 15 minutes uncovered. Wait until bread has cooled before tearing in (it's almost impossible).
