In a large pan, fry one onion with chestnut mushrooms until all the water is gone, season with salt and pepper. Make a béchamel with butter, flour and milk. Add sliced potatoes to the pan, pour the béchamel on top and stir well. Transfer in a buttered baking tray and add parmesan between the layers and on the top. In the oven for 40mins.
