Smoked Mackerel and Roast Veg Salad - Drizzle a handful of halved new potatoes and a large carrot cut into thick batons with some extra virgin olive oil and some salt and pepper. Slice a few Spring onions into thick sections. Roast potatoes and carrots covered in foil for 20 mins, then stir, remove foil, add spring onions and and roast for an additional 20. Get two heaped tablespoonfuls of mayonnaise and add enough mustard to create a hot, creamy sauce. Put to one side. Flake two smoked mackerel fillets.
When veg is roasted, remove from dish with slotted spoon and place into large bowl. Add fish and a handful of salad, heavy with rocket or watercress and stir in dressing. Divide into bowls and enjoy.
