I used some homemade pizza dough from the freezer, thawed it and shaped it on a pizza peel. I put some AP flour and cornmeal on the peel to prevent sticking. I set my oven to the highest temp 550 degrees Fahrenheit with my pizza stone on the rack in the upper third of the oven.
I sprinkled some olive oil on the crust then mixed some canned diced tomato with some homemade BBQ sauce and spread that on next. Then took some reheated smoked shredded beef brisket and spread that on next. Then sprinkled some shredded cheddar and placed pieces of fresh mozzarella on, sprinkled on some freshly grated parmigiano reggiano and fresh cilantro.
I slid the pizza onto the preheated stone and cooked for 12-20 minutes checking to make sure it doesn't burn. Remove when cheese is melted and crust appears browned. Remove from oven with peel. Cut into 8 slices and enjoy!
