Now's the season to enjoy ramps, and what better way to celebrate than with Ramp pesto!
Combine ramps, toasted pine nuts, and salt in a food processor or blender drizzling olive oil in until everything just comes together into a paste. If you want to eat it right away, mix in grated Pecorino Romano. If your intention is to freeze it, then place it in a freezer friendly container and pour enough olive oil in to just cover the top. This preserves the bright green color.
