Super-satisfying dinner. Toast chickpeas in a frying pan with pepper, cumin and paprika. Roast some cherry tomatoes in the oven. Thinly slice sprain onions (aka salad onions) and use a vegetable peeler to get ribbons of cucumber and carrot. Make a base in your bowl with leftover leaves (rocket, spinach, etc.), then layer everything else in on top. Add extras like egg or feta as desired/have available.
