Halved apricots stuffed with mascarpone cream (mascarpone, whip cream, powdered sugar) topped with chopped toasted pecans. Quick sweet snack!

Try boiling them in a toaster oven. The sugar makes a cream brûlée crackle. So good. I do this with peaches. Looking forward to apricots.

Ooh I like that. These just happened to be super sweet apricots already, but I imagine a bit of broiling will only enhance the flavor.
