Wholemeal pasta, cooked egg yolk and marscapone sauce, with pan fried bacon, shallots garlic and tomato with a Parmesan crisp.

Whisk egg yolks and a good dollop of marscapone together. When the pasta is cooked. Drain and return to the pan. Stir in the sauce until the pasta is fully coated. Season.

Fry bacon and shallots until the bacon is crispy then add garlic, tomatoes and a few basil leaves.

To make the Parmesan crisp, finely grate a handful of Parmesan. Sprinkle in to a circular shape on baking paper and bake for 10 minutes at 170.
