Melt a bit of coconut oil over medium high heat. Add shredded sweet potatoes and a sprinkle of salt to the pan. Fry until browned and crispy. Move potatoes to the side of the pan and fry eggs. Serve with avocado slices and finish with salt and pepper. #breakfast
