Charred radicchio with pancetta and parmesan. ✨ Fry pancetta until crispy. Reserve 2 tablespoons of the rendered fat and mix with apple cider vinegar and a pinch of sugar for a simple dressing. Sear quartered radicchio in the remaining pancetta drippings until charred on both of the cut sides. Let cool a few minutes, then spoon a little of the dressing over the radicchio and shower with crispy pancetta and shaved parmesan. #notrecipe
