Lentil and Kale Salad with (quail) eggs, feta, sunflower seed sprouts and beets.
I came across the quail eggs at the farmers mkt and couldn't resist. Use any fresh eggs!
Massage lacinato kale with a little olive oil and lemon juice. Top with a jeep of cooked French lentils, feta, thinly sliced or shaved raw beets and sunflower seed sprouts (or sprout of choice).
