Roast 3 cups of raw almonds for about 10 minutes at 350. Stir halfway. Pour 1/4 cup of a neutral oil in a blender or food processor, then add the almonds, a good pinch of salt and, if you like. A pinch of cinnamon and spoon of honey. Blend like crazy. It will take quite awhile. Stir the contents every couple of minutes. When almond butter is the consistency you like, scoop it into an airtight container.
