• Peel 10 organic lemons, place in glass jar.
•Add one liter 100 proof vodka, cover.
•store in cool dry spot for at least 5 days and up to one month (I left it for three weeks.)
•place mesh strainer over a bowl and drain, pressing peels to expel all liquid.
Make a simple syrup of 2 c water : 2 c sugar, heating over med saucepan until all sugar is dissolved. Cool completely
•add syrup to vodka and stir to combine. •decant into glass jars, store in the fridge
