Leftover scramble: sauté mushrooms, chopped asparagus and chopped zucchini (or whatever you have in the fridge!) for a few minutes over medium low heat. Beat four eggs in a bowl, pour over veg and patiently scramble using a spatula. Serve on toast topped with chopped chives and parsley and a sprinkle of feta. #eggs #breakfast
