Plant-based Omelette with leftover za'atar roasted cauliflower and zucchini. Make omelette (equal amounts chickpea flour and water) Add pinch turmeric for color and 1/2 t baking powder for lift. Season with salt, red pepper and garlic. Cook over medium heat- be patient - fill as desired, fold over and serve. Enough for 2 or 1 ravenous person.
