Intensely savory brunch: Indian-spiced omelet incorporating chickpea flour in with the egg.

Batter is one egg, 2 tablespoons chickpea flour, 4 teaspoons water, salt, pepper, ground cumin and coriander, garlic and onion powder, and a dash of turmeric and curry powder. Filling is sautéed onions and red peppers, green peas, cilantro, and feta, and there's a dollop of strained yogurt and extra cilantro on top.
