What do you do when you love cilantro and realize your frig is overflowing with too many bunches? You go all in and make everything using cilantro!! This is my take on Yotam Ottolenghi's leek fritters. I used two big bunches of cilantro in both the fritters and yogurt sauce. Lots of cleaned and chopped leeks and shallots sautéd in olive oil..add lots of chopped cilantro, a teaspoon or so of coriander and cumin and a bit of cinnamon and turmeric. Make a batter from a whipped egg white, whole egg, whole milk and flour with baking powder. Fry fritters in more olive oil. Serve with a yogurt sauce made with more chopped cilantro, chopped garlic and lemon juice and salt. Rich, clean tasting and fresh-great flavor combination. My frig is now ready for more cilantro!
