there is literally nothing better than microwaving potatoes, cutting them into rounds, and pan frying them in olive oil (w salt and pepper, obviously...)
here, paired with some rounds of pork sausage and an arugula/green cabbage/parsley salad w balsamic vinegar, olive oil, and salt and pepper

I've never decided on a set time--usually on high for about 3-5 minutes, depending on the microwave... However long it takes to get them cooked through and soft (but still sliceable)!
