Chili as You Like
Serves 8-10 servings

Great healthy meal for this crazy weather!
3 lbs ground meat (Turkey, Chicken, Bison, Beef – I like Turkey/Bison)
3 cloves garlic minced (about 1 Tbsp)
3 onions diced
3 red peppers cut into strips the sliced
3 zucchinis quartered lengthwise and diced
Get creative and substitute any vegetables you have on hand
2 Tbsp medium chili powder
2 Tbsp hot chili powder
1 Tbsp onion powder
1 Tbsp garlic powder
1 tsp ground cumin
1 Tbsp oregano
1, 4oz can diced green chilies

1 can black beans, rinsed
12 oz tomato paste
36 oz water (3 cans)
¼ + cup minced cilantro or parsley
In a large skillet/sauté pan (sprayed with Pam) sauté the onion until wilted; add the red peppers and zucchini. Sauté until cooked through (approximately 10 minutes). Remove to a large bowl.
Using the same pan you cooked the vegetables in, start to brown the ground meat; add the minced garlic as the meat starts to brown. Continue to cook using a spatula to break the meat apart into small pieces.
When the meat is almost cooked through, add the chili powders, onion powder, garlic powder, cumin, oregano and green chilies. Stir to combine all ingredients thoroughly and continue to cook over a high heat for 5 minutes.
Add the reserved vegetables, black beans, tomato paste and water, stir to combine. Continue to cook over a medium heat for another 5-10 minutes.
The meat mixture should be relatively dry, yet held together by a thick sauce. Add more water as necessary to reach your preferred consistency.
Add the chopped cilantro, stir to incorporate. Remove from heat and cool.
Serve with roasted sweet potatoes, or brown rice, with a dollop of 0% fat Greek yogurt on top.
