There are days when you crave simplicity without compromising on flavour. And this salad ticks the boxes for me.
Cherry tomatoes (halved) and basil picked fresh from the garden, a quarter of red onion diced, buffalo mozzarella, drizzle over olive oil and balsamic reduction and finally sprinkle with Tuscan seasoning (ground fennel seed, home dried basil/oregano/rosemary, salt). Leave for 30 mins for flavours to harmonise. I rarely can't wait that long but I like the idea! Share. Eat. Share again.
