Springy lentil salad

Cook lentils with some bouillon al dente. Stir in arugula while still warm so it wilts.

Mash fresh thyme with salt and olive oil, then stir in fresh lemon juice. Pour over lentils and add sliced radishes and green onions. Serve warm or room temperature.
