Pesto Parmesan deviled eggs with sprinkled smoked paprika. 2 dozen eggs boiled to perfection. (Single layer of eggs in pan covered with cold water an inch over the layer. Bring to boil over medium high plus heat. Cover, remove from heat & set aside for 12 minutes. Wash in ice bath & peel under cool running water. Don't worry, not every egg is going to peal perfectly?)
Slice 6 eggs in half (completely or just the white) dump yolks in a bowl & save the whites. Gotta stuff something!!
Mash the yolks with a fork till grainy. Mix 6 oz of pesto (homemade is better, but store bought works too) & pipe, spoon, scoop the mixture into the whites. Sprinkle with smoked paprika lightly! Otherwise the paprika overpowers the flavor. Enjoy my dears!
