Zucchini and Summer Squash noodles with red pepper sauce. So easy. So delicious.

Roast two red peppers. Blend with 2 ounces goat cheese and 1 tablespoon olive oil. Mix with cooked veggie noodles.

Any soft cheese should work, such as ricotta, cream cheese, marscapone, or any other local soft cheese. It gives the creaminess factor. You may also be able to try yogurt or some sour cream.
