Cook brown rice in chicken broth. Add generous amounts of chili powder, turmeric and curry to the rice and mix well. I add 1-2 heaping tablespoons. You can also add a half teaspoon of ground coriander. Set aside to cool. Chop up 5 shallots and 2 garlic cloves in food processor. Scramble 4-6 eggs (I use duck and chicken) add some milk and finely shredded cheese. Extra sharp cheddar is really good! Mix shallots & garlic into the rice. Add a can of chili beans (do not drain)! Spray a pan and add pour rice and bean mixture into the pan and then pour eggs in and gently mix it in. Bake at 350 until eggs are set. Serve with a generous amount of sour cream or Greek yogurt!
