Vegan Frozen Chocolate Mousse

Soak raw cashews (about 1 cup) for at least 1 hour, blend (in a vitamix or food processor) with 1 avocado, cocoa powder, dates, Celtic sea salt and fresh young coconut meat (when you drink coconut water from a young coconut- don't waste the meat!) until you have a creamy purée. Adjust sweetness and chocolate to taste. Chill and serve or add to an ice cream maker to enjoy a frozen treat! #vegan #dessert #notrecipes #glutenfree
