Eierpfannekuchen, German egg pancakes, in honor of my mom who passed away a few months ago. Easy to remember recipe, it comes in two's:
2 tbsp white flour
2 tbsp whole milk
Add a splash of water and dash of salt and whisk up. Melt 1 tsp butter in shallow frying pan and cook over medium heat.
Can be served sweet or savory. This morning I was in the mood for blueberries and maple syrup. As a kid I often just sprinkled it with sugar. Also great with crispy bacon bits, sautéed mushrooms and spinach.
