Potato-based chocolate truffles!
½ cup of unsalted finely-mashed potatoes.
1 cup of microwaved dark chocolate
1 tsp vanilla extract
Cocoa powder to cover.
Using a double boiler, thoroughly mix the potatoes and molten chocolate until completely incorporated, fold in the vanilla and chill in the fridge until completely cool, about 2 hours.
Prepare a flat plate with the cocoa powder. Take out the chilled mixture, scoop out spoonfuls and roll to a ball between your palms. Drop the balls in the cocoa powder to completely cover, then shake off excess powder. Finally, top with a flake of salt for a nice surprise! #truffles #chocolate #potato
