Cookie butter cupcakes! Tweaked a peanut butter frosting recipe for cookie butter - 1/2 cup butter, 1 cup icing sugar, 1/3 cup cookie butter (more if you want), a spot of vanilla, a couple TBs of heavy cream and a dash of salt in case it's too sweet.
The cupcake is your regular vanilla cupcake with the sugar measurement tweaked in favour of brown sugar in a 2:1 ratio (3/4 granulated sugar became 1/2 brown and 1/4 regular granulated). My cupcakes are eggless, but not vegan (I used butter and cows milk, but it was based out of Isa Chandra's vegan recipe for golden vanilla cupcakes)
