Heat a sauté pan or nonstick pan over low to medium heat. If you are non using a nonstick pan, generously spray the sauté pan with coconut oil spray.
Measure 150ml of egg whites and beat in one whole egg with a fork. Pour into heated pan.
Season with salt and pepper, add crumbled non fat feta and torn baby spinach leaves. Cook over low heat. Gently tilt the pan and lift underside of omelette and allow uncooked egg mixture to run underneath.
When almost set, gently tilt pan and fold one side of omelette onto the other side and slide the omelette onto a plate.
